BJ Penn quitting on his stool rather than facing the consequences for his shit talking ("to teh death georges is a quitter!!!" {<jordan} ) and getting in there for another round with GSP disqualifies him from this list.

Sakuraba faced roided "axe murderer" Wand three times in Pride. Lost the first via knees and kicks in the head, lost the second to a broken collar bone and decided to go for a third try.

Khabib. Oozed with confidence and he just knew he was levels above his counterparts.

He was also fighting bears when he was in kindergarten.
Khabib was so fearless that he killed himself with cuts to 155 and never even entertained fighting at 170.
 
I'm more inclined to pick guys that got their ass kicked repeatedly and kept coming back for more. Hendo/Fedor are all time badasses, but we're usually favored to win, or at least not get 100% wrecked.

So I vote for Sakuraba, Leben, KZ.
