In old Judo books, it is called the "Yubi Shime" (=finger choke). Seems like a more marketable name to me.

Can't you just grab the wrist with both hands? Or grab the elbow joint with both hands and pull so there forearm is now flush against your body (where you can then perform the simple upa bridge mount escape)?

You mean a mounted choke with the arms outstretched? It's too easy to bridge someone off when they do that. All good mounted chokes require that you either base-out or grapevine a leg to prevent the bridge.
