I'm going to throw Hidehiko Yoshida into the conversation.
His 2 Dec losses (1 split) to Wanderlei Silva, and his Draw with Royce Gracie were crazy impressive and forced the MMA world to take notice of him as a legit threat to anyone in the division. Granted, this was Pride - the matchmaking was hardly consistent - but I remember those fights in particular really changing fans perception of Yoshida.
Gus is probably the most significant example I can think of though.
