If you do it for ethical reasons, that's fine, whatever but if you do it for "health" reasons, here is a rationale for you. Why in the world are you eating like an herbivore animal? Herbivores without exception hace a fermentation chamber in their digestive track where microorganisms are cultivated. There cultivated microorganisms are then dumped into an acid bath found within the digestive track where those microorganisms are killed and digested. This is where herbivores get their fat and protein. Where in the human digestive track do we have a machinery to grow and digest microorganisms?

Gorillas do, that's why they can keep up their fat/protein intake. I guess you have this simplistic impression that you can get everything from plants but you are not looking at the whole picture, your reductionist approach does not work here nor in many aspects of life.
