Disco fries is usually mozzarella but some wack places use cheddar. I believe they use the shredded stuff or sometimes it is chunks. Some of the newer Mexican cooks that took over working in those diners add an egg and some bacon. The gravy in America is a little different too. It's dark and very thick. I don't like disco fries because they sometimes use steak fries. That type of fry has too much potato and it is very soggy.

Animal style fries are caramelized onions cheese and 1000 island. The 1000 island at in n out is pretty bland though they call it spread.
