The highest paid guy in a group of underpaid people is still underpaid. The UFC simply gives less of its profit to its athletes than any of the major organizations. If the company you're working wants you to do extra work (for instance, a superfight) but doesn't want to pay you extra for it, do you do it, or do you hold out for a bigger slice of the pie?

And everything about prize fighting is about money. The saying "follow the money" applies to MMA and every other professional sport. If they just wanted to fight and didn't care about money, they could go to a bar parking lot and fight. There's a reason they don't do that.

Underpaid is in terms of percentage of the revenue generated by the fight. If the fighters pull in $5 million dollars of PPV for the UFC, then getting paid a million each is good. If the fighters pull in $100 million for the UFC, then getting paid a million each is bad.

In practice, under capitalism how much is a fair payment ultimately is determined by the market. If promoters and fighters all agree, then the payment is by definition fair and the fight happens. If they don't agree then at least one of the three (and in the case of MMA I suspect often two - the fighters) thinks its unfair, and the fight doesn't happen.

And of course a lot of negotiation goes on between promoters and fighters, and in the case of super fights between dominant champs these negotiations are about tens of millions of dollars, which means the negotiations can last a long time. A normal part of negotiations in any industry is one or more sides holding out for better, and that can go on for several years in most industries -- no competent business man rushes into a bad deal when big money is involved, something that both the promoters and the fighters' managers will know very well. Tough to duck a fight you weren't calling for. Its baffling to me that all his haters say he ducked a fight when it was literally everyone else but him calling for it. I'm in the minority, but I wouldn't be shocked if GSP was still great. The age thing gets played out, we've seen a ton of world champions in combat sports, not just MMA, be anywhere from their mid 30s to early 40s. GSP won the MW belt at 36 years old and he isn't even 40 yet. I'm not saying he's in his prime, but I wouldn't be shocked if he's still really, really good and a threat to Khabib. But ultimately, if GSP doesn't want the fight, that's all that matters at this stage. But the fight itself would interest me greatly.
