It is an incredible pain in the ass to make. If you go to a pho place and they didn't bring the pho out immediately, something isn't right. A pho place should have a big pot of fresh broth they made one or two days before. I made it once it I think it had to sit on the stove for like 12 hours.

There is a lot more good but nothing special pho's than ramen. Good pho is better than ramen. I always get the feeling that it is way easier to make good ramen than pho. I have never been very blown away by ramen. I don't know why. The broth has never just wowed me even when good.

It depends on where you get it. Some pho's have heavy broths but nothing like Vietnamese beef stew.
